Matcha white chocolate chip cookies are built on balance - earthy, sweet, and richly buttery all at once. Preheat the oven to 180°C and line a baking tray with parchment paper.
Sift together flour, matcha powder, baking powder, baking soda and salt. Set aside.
Whisk together butter and both sugars until light and fluffy.
Add in the egg and vanilla extract and continue whisking until combined.
Fold in the dry ingredients into the wet with a spatula, and lastly add in the white chocolate chips. Save a few white chocolate chips to place over the cookie before baking.
Cover the cookie dough and place it in the refrigerator for half an hour.
Portion out the cookies into 40g balls and place them on the parchment paper-lined baking tray.
Lightly flatten the dough balls and place a few white chocolate chips on top.
Bake for 12-15 mins.
Lightly tap the tray on the countertop twice (this allows them to force out large, trapped air bubbles, ensuring a dense, even texture) and let them cool completely on a wire rack before enjoying.
