Kashmir's red gold. Third-generation hands.

Avi is a third-generation saffron farmer in Pampore, Kashmir โ the valley where this 'red gold' has been cultivated for over 500 years. Each fall, his family hand-picks the delicate crimson threads at dawn, when the flowers are still closed. At 8.7% crocin content, this is saffron at its most potent: deep color, sweet aroma, and flavor that Spanish and Iranian varieties can't match.
Soak threads in warm milk or water to release color and aroma before adding to dishes.
